Hearty Meat & Potatoes

For a cold winter night.

 56 small potatoes
 45 slices bacon (or substitute)
 12 tbsp butter
 ½ tsp salt
 ½ tsp pepper
 ½ medium onion
 4 oz Gouda , or any strong cheese
 garlic granules (optional)

First prepare your ingredients: peel the potatoes if you wish and cut off any bad spots. Slice them into thin rounds. Chop the meat into postage-stamp-sized pieces. Add the potatoes and meat to your large cooking pot, along with the butter, salt, and pepper.

Cut the cheese and the onion into medium-sized chunks, and set them aside.

Now, cook the potatoes: prime and light your stove, and turn it to the lowest setting. Sauté the potatoes and meat, stirring and separating the potato slices, until the potatoes are mostly cooked, about 7 minutes. Add the cheese and onions, stirring, until the cheese melts and the onions are cooked.

Next, flatten the mound of potato slices as best you can. Leave them alone for a minute or two without stirring, or until the cheese on the bottom browns and caramelizes, creating a delicious crusty layer. Flip the mass of potatoes over in two or three chunks, and allow the potatoes and cheese to caramelize on the second side.

When nearly everything is golden and crusty, turn off the stove, and allow the potatoes to cool slightly. Serve straight from the pot, sprinkled liberally with garlic granules and more black pepper.
